Chicken on the Grill....

Start by loading up the grill with charcoal on one side of the grill only....This allows you to have a HOT side for DIRECT cooking and a COOL side for IN-DIRECT cooking. Ok, now light the grill and wait until the coals are ALL a whitish color. 
Next, lets prepare the chicken for cooking. First wash the chicken to get the slimy stuff off of it. Then place it on some wax paper and grab some of your favorite seasonings. I like to use garlic powder.
I like to use a LOT of the stuff!!!


Next, take some HICKORY wood chips and put them in a bowl full of water for a few minutes to let them soak and absorb the water. This will keep them from burning up right away and will make a nice smoky flavor.


When the grill is ready and looks like this.......

...then put the chicken on the COOL side. (The side where there are NO coals below.)


Now, take a 'pinch' of the hickory chips and put them directly on the hot coals. (just a pinch will do for now, too many chips will make too much smoke and ruin the chicken.)


Now cover up the grill and let the chicken cook for about 15 minutes before you lift the lid again. After 15 minutes lift up the lid and add another pinch of the Hickory chips directly on the hot coals.

When you add the Hickory chips you might want brush on some BBQ sauce OR some Italian dressing. 


Now cover up the grill again and let it cook for another 15 minutes or so until DONE. (If you are not sure when 'Done' is, check it with a meat thermometer. It should be 165 degrees.) Your chicken should look something like this...

Serve it right away!!!  YUMMY!
